Double Chocolate Chunk Cookies

KushKush celebrated turning 1 like any regular one-year-old would: by hosting the P.A.R.T.Y. to end all parties (in the virtual world, anyway) and by gifting ourselves, and our friends, with a delivery of yummy, canna-infused Double Chocolate Chunk Cookies from Brwngrlbakes in Stellenbosch.

‘These cookies are our best-selling product – they’re a guaranteed good time’, says owner Zoë Meiring, so try out her special vegan recipe below but, if you can’t be assed to bake (we’re not judging!), have a squizz at her delectable menu of infused treats on Instagram then DM Zoë to get in touch!

Ingredients:

  • 112g (1/2 cup) Infused Vegan Butter – try using Clover Mama Bake Margarine - an 'accidentally' vegan product - as your base and learn how to infuse it here
  • 200g (1 cup) brown sugar 
  • 1 tsp vanilla essence 
  • 2 Tbsp soy milk
  • 125g (1 cup) cake wheat flour
  • 56g (2/3 cup) cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 120g vegan dark chocolate pieces 

Baking instructions:

Preheat the oven to 180°C

Combine the vegan butter and brown sugar in a mixing bowl. Add the vanilla essence and soy milk and mix well.

Sift the flour and cocoa powder into the mixing bowl and add the baking soda and salt.

Add the dry ingredients to the wet, mixing in by hand to form a thick cookie dough.

Add the dark chocolate pieces and mix in. The cookie dough should be thick enough to roll into balls.

Roll the cookie dough into 12 equally-sized balls and space evenly on a baking tray lined with baking paper.

Bake for 12-15 minutes. The edges will be firm but the cookies must still be soft in the middle. The cookies will become firmer as they cool.

If you love dark chocolate as much as we do, press a few more chocolate pieces on the top of the cookies when they come out of the oven.

** Remember that edibles are as strong as you make them; and even then it can be tricky to predict the strength as it will depend on the strain of cannabis you use to infuse your vegan butter. We strongly recommend that you start low and go slow: eat just a quarter of a cookie and wait for at least an hour before having more.
